Ah, Monday. Why do you come so quickly? The weekends just never seem to last long enough! My weekend was generally full of local travel and errands that keep me out of the kitchen for most of it. I spent Saturday in Monterey diving and when I returned home on Saturday night I was both exhausted and starving!! Fortunately dinner was already planned with a friend, but I’m going to keep this first recipe close by for a quick and satisfying meal for future diving nights.

Now, I suppose that lemon curd ice cream sounds like something one should be making, but truth be told, I don’t think that you will see me making ice cream any time soon. It just isn’t one of the things that I don’t eat very much and I do believe most of it would just go to waste. Plus, I don’t have an ice cream maker and I’m far too lazy to figure out how to make it without. So, disregard the ice cream and check out the absolutely adorable strawberry and cherry dish. I have no idea where she got it, but I want it!
